Bergamot & Pistachio Cupcakes
On m'a offert il y a quelques mois un pot de confiture de bergamote. Depuis j'ai longtemps, longtemps cherché la recette qui lui ferait honneur et je me suis finalement inspirée d'un recette de Mon Grain de Sucre à laquelle j'ai ajouté ma petite touche personnelle. Pour le glaçage, j'ai utilisé la recette du cream cheese frosting de Hummingbird Bakery à laquelle j'ai ajouté une touche de citron. Bref, tout ça pour dire que cette recette-là a fait le bonheur de ceux qui y ont goûté. Et le vôtre ?
Pour 12 cupcakes
180g de beurre à température ambiante
130g de sucre
4 œufs
160g de farine tamisée
30g de pistaches crues et émondées
12 cuillères à café de confiture de bergamote
Préchauffez votre four à 180°C. Battez le beurre et le sucre en pommade. Ajoutez les œufs un à un, en mélangeant bien. Ajoutez la farine et mélangez. Concassez grossièrement les pistaches et Ajoutez-les au mélange.
Placez les caissettes en papier dans les moules à muffins et remplissez-les jusqu’aux 3/4. Faites cuire environ 20 minutes ou jusqu’à ce que vos gâteaux soient légèrement dorés et que la lame d’un couteau en ressorte propre.
À la sortie du four, laissez refroidir puis creusez un trou au centre de chaque cupcake afin d’y incorporer une cuillère à café de confiture de bergamote.
Glaçage au citron
300g de sucre glace tamisé
50g de beurre à température ambiante
125g de cream cheese, de type philadelphia
Le jus et le zeste d’un demi-citron
Battez le beurre et le sucre glace jusqu’à obtenir un mélange homogène puis ajoutez le cream cheese et fouettez. Lorsque vous obtenez un mélange aéré et homogène, ajoutez le jus et le zeste de citron et mélangez bien. Votre glaçage est prêt à la décoration de vos cupcakes ! Bon appétit !
A few months ago, I was given a jar of bergamot marmalade. Ever since I've been looking for the perfect recipe to use it in. In the end I adapted a recipe by Mon Grain de Sucre. As for the frosting, I used the Hummingbird Bakery's cream cheese frosting, to which I added a hint of lemon. All in all, every person who tried those cupcakes loved the flavours. Will you?
Makes 12
180g unsalted butter
130g sugar
4 eggs
160g flour, sifted
30g pistachio kernels
12 teaspoons of bergamot marmalade
Preheat your oven to 180°C. Put the sugar and butter into a bowl and beat with an electric mixer until light and fluffy. Add the eggs, one at a time and beat well. Incorporate the sifted flour. Crush the pistachios and add them to the mixture.
Divide the mixture between the paper cases and bake for about 20 minutes, or until light golden. A skewer inserted in the centre should come out clean. Leave the cupcakes to cool slightly in the pan before turning out onto a wire rack to cool completely.
When the cupcakes are cold, hollow a small hole in the centre of each one and fill with the bergamot jam before frosting.
Lemon Cream Cheese Frosting
300g icing sugar, sifted
50g unsalted butter at room temperature
125g cream cheese, cold
zest and juice of half a lemon
Beat the icing sugar and butter with an electric mixer until the mixture comes together and is well mixed. Add the cream cheese in one go and beat until completely incorporated, light and fluffy (5 minutes). Do not overbeat as it can quickly become runny. Then add the lemon zest and juice and mix well. Your frosting is ready to decorate your cupcakes. Enjoy!
