Marshmallow Cupcakes
Une recette pour les très gourmands !
Pour 12 cupcakes
120g de farine tamisée
140g de sucre en poudre
1½ cuillère à café de levure chimique
1 pincée de sel
45g de beurre ramolli
120ml de lait entier
1 oeuf
¼ cuillère à café d’extrait de vanille
12 marshmallows
Préchauffez le four à 170°C. À l’aide d’un batteur électrique, battez le sucre et le beurre jusqu’à obtenir un mélange léger et onctueux. Ajoutez l’œuf, le lait et l’extrait de vanille puis battez jusqu’à ce que la pâte soit homogène. Ajoutez progressivement la farine tamisée, la levure chimique et le sel et mélangez bien.
Versez la pâte dans les moules à cupcakes et mettez au four pendant 20 à 25 minutes jusqu’à ce que les gâteaux soient dorés.
Faites fondre les marshmallows au bain-marie. Puis, lorsque les cupcakes sont refroidis, creusez un petit trou au centre de chaque gâteau et remplissez-les avec les marshmallows fondus. Laissez refroidir.
Glaçage à la vanille
250g de sucre glace tamisé
125g de beurre ramolli
1-2 cuillères à soupe de lait
1 cuillère à café d’extrait de vanille
Quelques goûtes de colorant rose (facultatif)
125g de fondant (facultatif)
Dans un saladier, battez le beurre jusqu’à obtenir une pommade. Ajoutez progressivement le sucre glace tamisé, le lait et l’extrait de vanille tout en continuant à battre. Lorsque votre glaçage est aéré et homogène, ajoutez quelques gouttes de colorant rose jusqu’à obtenir la teinte désirée.
Votre glaçage est prêt pour la décoration de vos cupcakes.
Si vous souhaitez ajouter du fondant à votre décoration, comme je l’ai fait sur ces photos, étalez le fondant sur une surface lisse et découpez des cercles à l’aide d’un emporte pièce. Les cercles de fondant peuvent être ajoutés sur votre glaçage.
A very sweet recipe for very sweet teeth…
Makes 12
120g plain flour
140g caster sugar
1½ teaspoon baking powder
1 pinch of salt
45g unsalted butter, at room temperature
120ml full fat milk
1 egg
¼ teaspoon vanilla extract
12 medium marshmallows
Preheat the oven to 170°C. Put the butter and sugar into a bowl and whisk with an electric mixer until soft and fluffy.
Add the egg, milk, vanilla extract and whisk again until combined. Gently fold in the sifted flour, baking powder and salt, making sure all the ingredients are combined.
Spoon the mixture into the cupcakes and bake in the oven for 20-25 minutes until light and golden.
Leave the cupcakes in the tray for about 2 minutes to cool slightly then transfer to a cooling rack to cool completely.
Put the marshmallows into a heatproof bowl over a simmering pan of water and leave until they are melted and smooth. When the cupcakes are cold, hollow out a small section in the centre of each cake and fill it with a dollop of the melted marshmallows. Leave to cool.
Pink Vanilla Frosting
250g icing sugar, sifted
125g unsalted butter, at room temperature
1-2 tablespoons milk
1 teaspoon vanilla extract
a couple drops food colouring
125g fondant icing (optional)
In a bowl, add the butter and mix until soft and fluffy. Gradually add the sifted icing sugar, milk and vanilla extract and whisk together until combined. Add a couple of drops of pink food colouring until you have the desired shade.
Your frosting is now ready to decorate your cupcakes. You can add circles of fondant on top of your cupcakes if you wish.
