The Chocolate Cake
Il ne s’appelle pas “the chocolate cake” pour rien ! J’ai eu un coup de coeur pour cette recette quand je l’ai vue ici et j’ai donc décidé d’en faire mon gâteau d’anniversaire de ce weekend. Inutile de dire qu’il a eu beaucoup de succès. Il est aussi beau que bon et il n’en reste d’ailleurs plus que deux petites parts.
Ingrédients
220g de farine
370g de sucre
90g de bon cacao
2 cuillères à café de bicarbonate de soude
1 cuillère à café de levure chimique
1 cuillère à café de sel
260ml de babeurre
100ml d’huile végétale
2 œufs à température ambiant
1 cuillère à café d’extrait de vanille
250ml de café
Préchauffez votre four à 170°C. Beurrez deux moules à manquer d’environ 20cm de diamètre. Couvrez les fonds de papier cuisson puis beurrez et farinez le reste des moules.
Tamisez la farine, le sucre, le cacao, le bicarbonate de soude, la levure et le sel et mélangez. Dans un autre bol, mélangez le babeurre, l’huile, les œufs et l’extrait de vanille. À l’aide d’un batteur électrique, ajoutez et mélangez progressivement les ingrédients liquides au mélange précédent. Ajoutez le café petit à petit, tout en raclant le fond du bol avec une spatule en plastique si nécessaire . Divisez la pâte dans les moules et laissez cuire environ 30minutes ou jusqu’à ce que la lame d’un couteau enfoncée à cœur en ressorte propre. Laissez refroidir quelques minutes avant de démouler les gâteaux. Enlevez le papier cuisson et laissez refroidir sur une grille à pâtisserie
Attendez que les gâteaux soient complètement refroidis avant d’ajouter le glaçage.
Glaçage au chocolat
170g de chocolat noir
225g de beurre à température ambiante
1 jaune d’œuf à température ambiante
1 cuillère à café d’extrait de vanille
150g de sucre glace
Faites fondre le chocolat au bain-marie puis laissez refroidir.
À l’aide d’un batteur électrique, battez le beurre jusqu’à ce qu’il devienne pâle et crémeux. Ajoutez le jaune d’œuf et l’extrait de vanille et continuez à battre pendant environ 3 minutes. Ajoutez progressivement le sucre glace tout en raclant le fond du bol si nécessaire pour obtenir un mélange homogène. Petit à petit, ajoutez le chocolat tout en continuant à battre.
Retournez l’un des gâteaux sur un plat et recouvrez le dessus de glaçage en vous assurant de couvrir toute la surface. Déposez le deuxième gâteau au dessus, face bombée en dessous, et couvrez l’ensemble en commençant par appliquer une fine couche de glaçage sur la totalité du gâteau avant d’étaler le reste.
It’s “the chocolate cake” for a reason. I fell in love with the recipe when I saw it here so I decided to bake it for my birthday last weekend and it meets all expectations: it is simply the nicest chocolate cake you’ll ever try.
Ingredients
1 3/4 cup – 220g flour
2 cups – 370g sugar
3/4 cup – 90g good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup – 260ml buttermilk, shaken
1/2 cup – 100ml vegetable oil
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup – 250ml freshly brewed hot coffee
Preheat your oven to 170°C. Butter two sandwich tins. Line with parchment paper, then butter and flour the rest of the tins.
Sift the flour, sugar, cocoa, baking soda, baking powder and salt into a bowl and mix until combined. In another bowl, combine the buttermilk, oil, eggs and vanilla. Using an electric mixer, slowly add the wet ingredients to the dry. Once combined, add the coffee gradually and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans and bake for about 30 minutes, or until a cake tester comes out clean. Let the cakes cool in the tins for a few minutes, then transfer to a cooling tray and delicately take off the parchment paper.
Wait until your cakes have completely cooled down before frosting.
Chocolate Frosting
170g good semisweet or bittersweet chocolate
225g unsalted butter, at room temperature
1 egg yolk, at room temperature
1 teaspoon vanilla
150g sifted icing sugar
Chop the chocolate into small pieces and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature.
Using an electric mixer beat the butter until light and fluffy. Add the egg yolk and vanilla and continue beating for about 3 minutes. Gradually add the powdered sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy.
Slowly add the chocolate to the butter mixture and mix until blended.
Lay one of the cakes flat on a plate or cake stand and cover the top with frosting making sure you cover the entire surface evenly. Place the other cake on top and finish the frosting by applying a thin amount to cover the cake completely before adding and smoothing the rest.
